Recipe for Shrimp with Salsa
Ingredients
- 1 can (15 ounces) black beans, rinsed and drained
- 1 small green pepper, chopped
- 1 small red onion, finely chopped
- 1/2 c. chopped celery
- 2T chopped fresh cilantro
- 2/3 c salsa
- 1/4c lime juice
- 2T oil
- 2T honey
- 1/4 tsp salt
- Lettuce
- 2 lb cooked shrimp
Instructions
Combine all ingredients except lettuce and shrimp. Cover and chill at least an hour.
To serve, place lettuce on plate, salsa mix in center, and arrange shrimp around edges.
