Recipe for Chicken Shrimp Stir Fry

Ingredients

  • 2c instant rice
  • 2TB cornstarch
  • 1/2 tsp salt and pepper
  • 2 chicken breasts, boneless and skinless
  • 1/2 pound shrimp: peeled and deveined
  • Oil or Mazola spray
  • 1 yellow squash, cut in pieces
  • 1 red bell pepper, cut in pieces
  • 1 bag (8 oz) sugar snap peas
  • 1/2 cup stir fry sauce

Instructions

Prepare instant rice.

Put 1 TB cornstarch and 1/4 tsp salt and pepper in each of 2 plastic bags and add chicken to one bag, shrimp to other.

Add oil or spray to skillet, add chicken and stir fry 3 minutes or until done. Do the same for the shrimp. Remove to plate.

Heat oil or spray in pan and cook squash, red pepper and peas until crisp tender.

Add sauce and 1/2 cup water, bring to simmer. Add chicken, shrimp and serve it all on the rice.
