Recipe for Stuffed Chicken Breasts
Ingredients
6 chicken breasts, pounded flat Fresh basil leaves 1 Tbs olive oil 1/2 cup chopped sun dried tomates 4 oz shredded mozzarella 1/3 tsp dried rosemary 1/3 tsp dried oregano salt and pepper to taste
Instructions
Preheat oven to 375 degrees.
Coat one side of each chicken breast with olive oil and place a basil leaf on top.
In a small bowl, combine the tomatoes, mozzarella, rosemary, oregano and salt and pepper. Spoon equal amounts the middle of the chicken breasts. Roll edges of each breast and secure with toothpicks. Put into oven-safe casserole dish and drizzle with olive oil. Bake for 20 minutes or until golden brown.
