Recipe for Enchilada Meat Loaf

Ingredients

  • 1 egg, lightly beaten
  • 1 med. onion, finely chopped
  • 1/4 c. bottled salsa
  • 2 TB chili powder
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1 lb ground beef
  • 8.5 oz pkg corn muffin mix (Jiffy)
  • 2 oz sharp cheddar cheese
  • Bottled salsa,, optional

Instructions

Meatloaf with an unusual twist!

Preheat oven to 350 degrees. Combine egg, onion, 1/4 cup salsa, chili powder, garlic, and salt; add ground beef and mix well. Shape into a ball and place in 9" pie plate. Flatten to 6" circle.

Prepare corn muffin mix according to directions and spread over meat mixture in pie plate. Bake about 50 minutes or until done. Remove from oven and sprinkle cheese over top. Let stand 10 minutes before serving to let cheese melt. Serve with additional salsa, if desired.
