Recipe for Margarita Shrimp Salad

Ingredients

  • 1TB lime juice
  • 2tsp grated lime peel
  • 3 cloves garlic
  • 1lb large shrimp, shelled and deveined
  • 3/4cup chicken broth
  • 1 med. orange pepper (or red pepper)
  • 1 small onion, sliced
  • 1/4cup chopped fresh cilantro leaves
  • 4 cups torn romaine lettuce
  • 2 large tomatoes, thickly sliced
  • avocado slices

Instructions

Mix lime juice, lime peel, and garlic in ziploc bag. Add shrimp and toss to coat with marinade. Seal bag and refrigerate 30 minutes turning bag several times.

Heat broth over high heat in 2 qt saucepan to boil. Add pepper and onion and cook until vegetables are tender crisp.

Reduce heat to medium. Add shrimp and marinade, cooking until shrimp turn pink. Stir in cilantro.

Divide the lettuce, tomatoes, and shrimp mixture among 4 plates.
