Recipe for Spicy Grilled Quesadillas

Ingredients

  • 8 flour tortillas (8")
  • 2c. shredded cheddar cheese
  • 1 jar (16oz) chunky salsa
  • 1 cup diced cooked chicken
  • 1/2 c. chopped green onions
  • vegetable oil
  • 8 oz. sour cream

Instructions

Tender chicken, green onion, salsa, and cheese are sandwiched in flour tortillas and grilled until flaky and golden.

  1. Put 4 of the tortillas on a work surface. Top each with 1/2c. cheese, 1/4c. of salsa, 1/4c. chicken, and 2T green onions. Top with the remaining tortillas.

  2. Lightly oil the grill rack (frying pan). Brush the tops of the quesadillas with oil and place oil side down on the pan. Grill for about 3 min. Brush tops with oil, turn and grill for about 2 minutes more or until lightly brown. Remove from heat and let stand 2 minutes.

  3. Cut into wedges and serve with remaining salsa and sour cream.
