Recipe for Drunk Chicken - Version 2

Ingredients

  • 4-5 lb whole chicken, cut up
  • 12oz can of beer
  • small spanish onion, diced
  • 1/2 of green pepper, sliced
  • 5 sprigs of cilantro, chopped
  • 4 garlic cloves, minced
  • about 12 stuffed olives
  • 8oz can of tomatoe sauce
  • 2-3 boxes of raisins
  • 4 potatoes peeled and halved
  • 1 packet sazon (regular flavor)
  • 3 cups of water
  • salt to taste

Instructions

Clean chicken, remove skin if desired.

Put chicken in an 8 quart pot. Pour the beer over chicken and boil for about 15 minutes.

Add onions, peppers, cilantro, garlic, olives, goya brand sazon, tomato sauce, and water.

Cover and boil about 15 minutes.

Add potatoes, raisins season with salt cover and simmer for about 25 minutes or until potatoes are fork tender and sauce has thickened slightly.

Serve with white rice.
