Recipe for Beef Goulash

Ingredients

  • 2 TB oil
  • 1 onion, minced
  • 1 TB minced garlic
  • 1 can stewed tomatoes
  • 1 green pepper
  • 1 TB paprika
  • 1.5 lbs lean stewing beef (or round steak)
  • 1 tsp tomato paste
  • 1 tsp salt
  • 1 c. water/beef boullion cube OR 1 cup beef broth
  • 2 red potatoes, peeled and diced

Instructions

In heavy stew pot, heat oil and saute onion and garlic until onion is wilted.

Add tomatoes, green pepper, paprika, beef, tomato paste, and salt.

Cook until beef is no longer pink.

Reduce heat and add broth. Cover and simmer 1.5 hours.

Add potatoes and simmer another 30-45 minutes or until potatoes are tender.

Serve on egg noodles.
